Cheese Shredding System

The Marchant Schmidt, Inc. Cheese Shred System for foodservice packaging was designed to produce 6,000 - 15,000 lbs/hr. depending on the required flow rate. Our unique cube feed transfer system can feed up to six cheese shredders or dicers at one time. The cutter feed system conveys cubes consistently at a high production rate, allowing maximized system throughput. By evenly feeding product to the shredders, jam-ups due to uneven flow are eliminated. The system is also designed with amperage load feedback, so excess cubes can be diverted from lanes through pneumatically operated gates. These gates are designed to modulate the product flow to the shredder as amperage increases or decreases. The shredded product is then discharged from the shredder/dicer onto a vibratory collection shaker where the starch/cellulose is applied. From there the product is conveyed into the mixing drum and transferred to the packaging area.
